No-Bake Energy Bites

** Recipe from Smashed Peas and Carrots **

* 1 c. oatmeal (use GF oats if desired)
* 1/2 c. peanut butter (or other nut butter)
* 1/3 c. honey
* 1 c. coconut flakes
* 1/2 c. ground flaxseed
* 1/2 c. mini chocolate chips
* 1 tsp. vanilla

Mix ingredients in a medium bowl until thoroughly incorporated.  Let chill in refrigerator for 30 min. Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.
